Wine has left this coast for two millennia: Roman kilns here fired the amphorae that carried Tarraconensis wine across the empire. But the Penedès' modern identity was forged in a coincidence of dates — Josep Raventós bottled Spain's first traditional-method sparkling wine in 1872, just as phylloxera was destroying the region's red vineyards, and replanting turned the land over to the white cava trio of Macabeo, Xarel·lo and Parellada.

Sant Sadurní d'Anoia became the industry's capital, its houses dug over kilometres of cellar galleries. From the 1960s the region doubled as the laboratory of modern Spanish still whites, with Torres importing cold fermentation and international varieties — making the Penedès at once Spain's most industrial and most experimental vineyard.
