Wine has been made on this high plateau behind Valencia since Iberian times: the archaeological site of Kelin, with its rock-cut fermentation troughs, records a wine culture reaching back to the seventh century BC. At 700 to 900 metres, the vineyard lives between two climates, Mediterranean by geography and continental by altitude, with cold nights that reds and rosés owe their freshness to.

For a century the region served as the bulk cellar of the port of Valencia, shipping deep-coloured wine by the tanker-load — an era that built its scale but hid its name. Its dowry from that time is Spain's largest reserve of old bush-vine bobal, a native grape now being re-read as a fine variety rather than a workhorse.
