A vineyard wedged between two Great Lakes and a waterfall. The benches below the Niagara Escarpment trap air warmed by Lake Ontario, making viticulture possible in a climate of continental extremes. For a century the peninsula grew hybrid grapes for fortified and sweet wines; the conversion to vinifera from the 1970s, sealed by the VQA quality standard in 1988, refounded the industry.

The dependable January freeze became the region's signature: grapes left hanging into deep winter are pressed frozen for icewine, and Inniskillin's Grand Prix at Vinexpo in 1991 announced Canada to the wine world. The quieter second act matters as much — cool-climate chardonnay, riesling and cabernet franc from the escarpment benches now carry the peninsula's reputation.
