One of the wine world's true originals, Hunter Valley Sémillon is picked early and made without oak into a lean, tart, low-alcohol white that seems almost neutral in its youth. Then, over ten or twenty years in bottle, it undergoes an extraordinary transformation — into a rich, golden wine of honey, toast, citrus and lanolin.

No other Sémillon in the world ages quite like it, and it does so with no sweetness, no oak and barely eleven degrees of alcohol. Born of a hot, humid climate that should defeat fine white wine, it is proof that the Hunter succeeds precisely by ignoring the rulebook.
