Furmint is the grape of Tokaj, with an acidity so fierce it survives any concentration — famously, noble-rot sweetness. Across the border in Slovenian Styria, where it is called Šipon, a new generation ferments it dry and on its skins: an « orange » wine, tannic and textured, of quince and candied citrus. Same ferocious grape, the opposite of sweet.
